One of the challenges Fox & the Knife has faced through all of this is the lack of connection with customers. Instead of chatting with guests tableside, Alex has had to foster relationships by writing notes on to-go bags and commenting on Instagram. But where does hospitality go when the face-to-face (now mask-to-mask) connection isn’t there? Giving up those interactions, handing over creative control as a chef to keep your business running, this isn’t what anyone signed up for. But F&K is showing their strength by how well they adapt. They are setting a beautiful example by navigating this impossible situation with poise.
'I'm hopeful that we can provide our team with a safe work environment once we reach the next phase. I’m hopeful that we can be creative and put a successful system in place. I hope that we can achieve that for them. I’m believe that we can adapt. We want to try to keep the personal aspects of this job personal. We want to continue to create those intimate moments for customers.' - Alexandra Hayden
